ABSTRACT

Coriander is an herb belonging to the Apiaceae family that is botanically called Coriandrum sativum. The shrubbery part of coriander is frequently used in salads and as a vegetable as well as being rich in vitamins, fibers, protein, carbohydrates, and minerals, including Fe, P, and Ca. On the other hand, the fresh leaves and seeds of coriander contain essential oils and different components used as preservatives and flavor enhancers in food products. The most important extraction techniques like organic solvent extraction, supercritical fluid extraction, and steam distillation are generally used for coriander seed extract. All parts of the coriander plant are edible, while the dried seeds and fresh coriander leaves are used commonly. Coriander seed oil is used as an appetizer and an aromatic stimulant and stimulates the intestine and stomach functions. Pharmacologically, different parts of coriander are used for their hepato-protective, anti-inflammation, antioxidant, and anti-diabetic properties. Conclusively, coriander extracts are helpful in the formation of different food products and also aid against various disorders.
