ABSTRACT

Coriander (Coriandrum sativum L.) belongs to the Apiaceae family and is a well-known aromatic annual herb with a long history as a culinary ingredient. It is a rich source of compounds possessing several biological activities. This chapter covers the general and proximate chemical and bioactive composition of coriander (Coriandrum sativum L.) seeds. It also explores the effect of different geographical areas where coriander is grown and its influence on seed composition.
