ABSTRACT

One of the most prevalent ways of consuming plum fruits is dried (prunes). The manufacture of prunes, however, results in a significant amount of processing waste. Together with other agricultural and processing of plums, common by-products include peels, seeds and pulp. The pulp is typically disposed of in landfills, causing pollution for decades. Recently there has been increasing research in reducing the amount of waste going to landfills, as well as finding new uses for the by-products of food processing. This chapter discusses the approaches and new applications of plum peels and seeds.
