ABSTRACT

Sensors and sensing technologies have changed the day-to-day to narratives of human life by improving various aspects of human endeavor through their application in various domains. Sensors are devices or gadgets with a primary mandate of detecting external signal or stimuli and collecting the signal for further processing and/or actions as required. Basic sensors may sense signals from various sources like light, heat, pressure, motion, and so forth. Sensors and sensing technology, though still emerging, have found their way into applications in various areas like healthcare, industrial design, food processing, and agriculture, among others. This chapter reviews various sensor technology and application in food processing, such as the use of electronic tongue for the monitoring of ageing in red wine, sensors for food process improvement and freshness.
