ABSTRACT

As the world population grows exponentially, food industries are saddled with the responsibility of feeding the ever-increasing world population. Food production, distribution, and storage, have continued to increase consumer demand for quality packaged food with improved shelf life. Food industries are presently utilizing active and intelligent packaging as solution for production, logistics for distribution, mitigating the need and deleterious impact of preservatives, and improving the quality of food. Biosensors, signal analysis and artificial sensing have widely been adopted for food processing and monitoring of food quality and authenticity. Artificial intelligence has brought about novel food packaging materials that provide healthy food to final consumers. The combination of antimicrobial and antifouling agents, mechanical and thermal protection, along with packaging materials allow biosensors to detect spoilage and growth of pathogens, as well as to monitor the storage conditions of food produce. This chapter provides an overview of biosensors and artificial intelligence and their application in food processing and packaging.
