ABSTRACT

Quality of health in humans has been attributed to the nature of food intake that is largely defined by the nutritional value cultures; however, the method of preservation and packing employed plays significant roles in the wellness of the body and even in the healing process in disease conditions. This has resulted in a sharp rise in the preference of consumers for the need to obtain fresh foods with good nutritive quality. This preference has led to improvement in various packaging mechanisms with various types of sensors being applied. An emerging technology rapidly addressing this area is the intelligent/active packaging technology that ensures close monitoring and surveillance with real-time information on the detailed condition of the product. This chapter elucidates on the modern techniques that encourage safe packaging of animal-based products to prevent diseases associated with food poisoning and to encourage shelf life of packaged products.
