ABSTRACT

One of the most important changes of the modern age has been changes to our nutrition and eating habits. The increase in consumption of processed foods, the spread of fast foods, and the preference for manufactured over natural products has had significant negative consequences on human health. As a result of these changes, humanity has faced many problems such as increased incidence of cancers, cardiovascular system disorders, neurological disorders, obesity, and stress. Despite the advances in modern medicine, with various methods of treatment, such as surgery, chemotherapy, and radiotherapy, being developed for these diseases, these developments have not eliminated the source of the problem. It is far preferable to maintain human well-being and comfort at the highest level by taking precautions before diseases occur. In this regard, proper nutrition is emerging as important. Research has proven that herbs, used in traditional cuisines and generally used as spices, have many beneficial effects due to their phytochemicals. Although herbs are relatively low in macronutrients, some plants are indispensable sources of micronutrients. Among these plants, sumac is a valuable plant with antimicrobial (antibacterial, antiviral, and antifungal), antidiabetic, antioxidant, anticancer, cardioprotective, and anti-inflammatory properties.
