ABSTRACT

Biofortification is a strategy that aims to enhance micronutrient concentrations in edible plant portions via crop breeding or biotechnology; we adopt a broader term here to include biofortification through agronomic methods as well. Numerous researchers have conducted extensive research into the reasons for the low quality of maize proteins. Niacin needs are increased by excessive consumption of leucine and the protein in maize, and this amino acid could be part of the cause of pellagra. Maize provides protein and calories to millions of people in underdeveloped nations. Quality protein maize has about double the amount of lysine and tryptophan as normal maize and a more nutritionally balanced amino acid profile. QPM may help avoid protein deficiency, particularly in newborn babies whose meals are mostly maize. The biuret test is the best method for measuring total zein protein in maize flour alcoholic extracts.
