ABSTRACT

This chapter discusses the work done on various aspects related to the bioactive nature of maize grain along with its health benefits. Maize, botanically known as Zea mays L., is an Indo-American term used for corn, and means that it sustains life. Maize has its origins in Mexico and is considered one of the most widely cultivated cereal grains due to its diverse adaptability to the soil and climatic conditions. Maize is regarded as an important cereal crop, having a bounty of nutrients required to meet the needs of humans. Maize is utilized as feed, food, natural resource for a number of purposes. Maize is a staple food of over 200 million people in Asia, Africa, and Latin America. It is also utilized in the making of traditional cuisines, for example, tortillas, porridge, and couscous. Maize also contains high resistant starch, primarily amylose, that helps in the management of chronic illnesses, for instance atherosclerosis, cancer, as well as obesity-related complications.
