ABSTRACT

Maize is one of the dominant subsistence crops in the world to provide proper nutrition and health care to the livelihood of growing populations. The bioavailability refers to the innate availability of nutrients in the crops essential for metabolic processes in the human body. Different interventions, including dietary diversification, industrial fortification, pharmaceutical supplementation, and crop bio-fortification, serve as the best methods to impart nutrients in the human diet. The micronutrients such as iron, zinc, and vitamin A are vital for the worlds population growth. Bio-fortification has the potential to combat widespread micronutrient deficiencies in humans through micronutrient implementation in food crops. The inculcation of vitamin A in human diet is a must because humans are capable of synthesizing vitamin A de novo in their bodies. The vitamin A requirement can be fulfilled directly as retinol from animal sources and its utilization as provitamin A carotenoids from plants.
