ABSTRACT

The major nutrients and phytochemicals in cereal grains make them a vital source of health and nutrition. In the food production chain, grain milling into various forms is an integral but challenging process. As cereals are processed, by-products like hulls, bran, germ, broken parts, middlings, feed, and so on with distinct physical and chemical characteristics are generated. Despite their potential for use in developing functional foods or extracting bioactive compounds, cereal by-products are usually fed to livestock, burned for fuel, or discarded into landfills. As the population of the world increases and people become more aware of sustainable living, healthy eating, and well-being, the interest of many industry sectors and markets is also rising rapidly in finding new, sustainable, and creative options for utilizing cereal-based by-products. In this regard, the chapter provides an overview of cereal production processes as well as the latest technological advances in valorization of cereal by-products and wastes.
