ABSTRACT

Mushrooms are getting huge attention in the culinary and healthcare market these days. The mushroom has been flourishing on our palate for decades. Current trends and findings in food technology have brought out the new aspect of every food item. A similar transformation has happened in the case of mushrooms as well. Numerous biological activities of mushrooms have been investigated so far. Secondary metabolites present in mushrooms have a wide range of therapeutic benefits. In the present chapter, the very popular mushroom with lesser-known market potential is described with its modern applications. Lactarius deliciosus is consumed as food due to its sensory attributes but many reports have shown that this typical mushroom has immense therapeutic activities like cytotoxic, antioxidant, antimicrobial, antihyperglycemic, antitumor, immune-stimulant, anticancer, anti-inflammatory, hypocholesterolemic and anticholinesterase. This chapter can be the key in exploring the area of nutraceuticals against multiple drug resistance in microorganisms and dealing with diseases.
