ABSTRACT

The fruit juices have always attracted the attention of all people due to their nutritive value. However, adulteration also increases with increasing demand. Stringent measures are therefore essential to maintain the quality of juices. The use of modern analytical instruments to assess the parameters and quality of the juices has been useful in maintaining their standard. DNA-based analytical techniques, isotopic methods like IRMS, SNIF-NMR, fluorescence spectroscopy and vibrational spectroscopy, and chromatography have been widely utilized for analyzing the authenticity of fruit juices. Multidimensional techniques, such as LC × LC or GC × GC are expected to be more widely applied in food authenticity and metabolomics studies for their selectivity. This chapter attempts to display the analytical results of different juices in order to distinguish a specific fruit juice from an adulterated one.
