ABSTRACT

Ample waste is generated from the confectionery processing industries, which includes solid as well as liquid waste. These generated wastes contain high amounts of valuable components like carbohydrates, proteins, and several bioactive compounds like tannins, flavonoids etc. They can be effectively utilized to produce value-added products like antioxidants. Food ingredients can also be produced from such waste, which has enormous application in the production of bakery products. Biodiesel can be successfully produced from such confectionery industrial processing waste. Therefore, in this chapter effective utilization of wastes from confectionery processing industries is discussed in detail.
