ABSTRACT

Probiotics, the living microorganisms that exert a positive health benefit have become quite popular nowadays. The administration of probiotics will help to maintain a healthy intestinal microbiota by the control of pathogens and immunomodulation. The best way of delivering probiotics to humans is through food. Probiotic foods should contain live-probiotic flora in adequate concentration suspended in a suitable matrix, so that it gives postulated health benefit beyond that of the usual nutrient supply after their ingestion. Nowadays, milk and milk products face growing competition from other food items as a delivery agent for probiotics. The protective effects to probiotics strains are more accomplished in dairy matrix. Fermented milk products such as cheese, yogurt, and delicacies like milk chocolates and ice cream are the most suitable products for delivering probiotics to humans.
