ABSTRACT

Milk is an excellent source of several functional and biologically active compounds. Bioactive peptides are examples of such biologically active compounds that are obtained from the milk proteins during the gastrointestinal digestion, hydrolysis, or fermentation of milk. They are generally the fractions of proteins amino acid sequence. These bioactive peptides are very helpful in uplifting the human health by modulating several biological functions ranging from digestive, immune, cardiovascular, and nervous system based on the sequence of their amino acid residues. Recently, there have been many researches about the production and isolation of biologically active peptides from whey proteins. Therefore, the intent of this chapter is to explain to the readers about the whey protein-derived bioactive peptides. The manufacturing and isolation techniques of the peptides have been discussed. The health implications, technological aspects, and applications are also given in the chapter.
