ABSTRACT

Nowadays, bioactive peptides (BPs) are introduced as a new source of compounds with multiple functions in various fields of health sciences. These compounds are usually generated from food proteins, which mainly were used in pharmaceutical sciences. Thus, introducing their applications in food industries is a new era in the science community, which can bring new methods for disease treatment. These compounds are good candidates for producing functional foods with the food therapy purposes. Thus, this chapter will provide information about BPs and will discuss major challenges and concerns to cover the principles needed for preparing functional foods with special health-promoting features.
