ABSTRACT

Numerous studies have reported Stevia rebaudiana to exhibit prompt effect against many physiological abnormalities including but not limited to, anti-hypersensitive, cardioprotective, anti-inflammatory, anticancer, antihyperglycemic. Stevia rebaudiana is recognized for its non-caloric sweetening properties and is a good candidate for developing new nutraceuticals treatment for diabetes. The bioactive phytochemical compounds extracted from Stevia rebaudiana are called steviol glycosides, a class of glycoconjugates that are revealed to be the most crucial for its activities against hyperglycemia. Steviol glycosides are administered orally, metabolized by distinct organs, and later eliminated by the body. They have been extensively studied for their response to high blood glucose levels (BGL). In this chapter, we aim to review the series of actions involved to achieve glucose homeostasis by steviol glycosides.
