ABSTRACT

One major challenge of agricultural produce (plant and animal) is its perishability, hence a critical way to address this is through the processing of the produce. Food processing and preservation has been the heart of food security as well as global food production. Over past decades, there has been a tremendous shift in the processing and preservation of food owing to industrial evolution, which has brought about the use of advanced machines for the processing and preservation of agricultural produce. However, due to the unpredictability of humans operating these machines, there has been increasing pressure for migration into the development of automation as well as artificial intelligence systems in food processing and preservation, and hence machine learning. Machine learning is a branch of artificial intelligence in which computer systems perform tasks or operations mimicking human intelligence. Although it has found application in many fields, its application in food processing and preservation is limited. Hence, this chapter aims to detail the application of machine learning techniques and algorithms adopted in intelligent food processing and preservation.
