ABSTRACT

Gelatin is an important biopolymer, finding application in the food, pharmaceutical, biomedical and photographic industries as well as diverse technical uses. Samples were collected from both east and west coasts of India viz., Thirupalakudi, Ramanathapuram district, Tamil Nadu and Thoppumpady, Kerala, India for C. indicus and A. marginatus respectively. The amino acids profile was analyzed by using high performance liquid chromatography. The amino acid composition affects the gelatin’s physical and chemical properties. The amino acid composition was expressed as residues per 1000 amino acid residues. Collagen has a uniform triple-helical conformation with semi-crystalline structure, which is determined by its repeating (Gly-XY) sequence pattern and high imino acid content. The viscosity of the gelatin solution increased significantly with increasing concentration and with decreasing temperature. The extracted gelatin has higher gelling temperature compared with commercial gelatin might be due to the presence of impurities.
