ABSTRACT

Acid proteases are enzymes that control various key processes in many organisms. Acidic proteases like cathepsins D and E were stored in lyzosomes within the cell whereas others like pepsin, cyprosin and endothiapepsin are form mammals, plants and fungal origins respectively were secreted out. Pepsin is one of the plenteous among these valuable products that can be recovered and purified from fish viscera and which be used in industrial processes like collagen extraction, gelatin extraction and cheese making. A standard tyrosine curve was prepared and the specific enzyme activity was expressed in Anson Unit. Acid proteases have gained attention of many researches due to variety of functions, from digestion to disease transmission, performed by them. pH is known to have ample influence on the specific activity of fish pepsin. Pepsins from these fishes displayed similar thermal stability. The gastric pepsin from both fishes exhibited similar temperature stability.
