ABSTRACT

This chapter discusses the status of marine microbial enzyme research from Indonesia to support the food industry and pharmaceuticals, namely, protease, and marine carbohydrase, namely, chitinase, chitosanase, agarase, alginate lyase, and carrageenase. Enzymes are biocatalysts widely used in various industries from feed, food, detergent, leather, textiles, laundry, pharmaceuticals, cosmetics, and fine chemicals which we used daily. Enzymes work efficiently and specifically in mild process conditions so that they can reduce environmental pollution and minimize the cost of production. Proteolytic enzymes have been used as meat tenderizers, and under controlled conditions and the right concentration of the proteolytic enzyme, the toughness of the meat will be reduced and the eating quality of meat enhanced. Collagenase enzymes are metalloprotease enzymes that hydrolyze a collagen that is the most abundant protein in marine animals; therefore, collagenase is important in the nitrogen recycling process in the ocean.
