ABSTRACT

Aroma flavor is one of most important quality of pineapple fruit. In this paper, aromatic compounds of pineapple fruits harvested in different time (February, April, June, August and October respectively) from September to April, were determined by SPME-GC-MS method. Results showed that February fruits had the least terpenes but most abundant esters also RCOOMe, among of which methyl hexanoate was predominant with the percentage of 67.95 while fruits harvested from April to October had much more RCOOEt such as ethyl hexanoate and ethyl octanoate, ethyl butyrate, ethyl 3-(Methylthio) propionate than February fruits, which counted for 1.74%, 63.59%, 58.26%, 48.67%, 56.31% respectively. Due to the low odor threshold value of RCOOEt, fruit harvested from April to October smelt much stronger fragrant than February fruit. April could be regarded as the best harvest time with best aroma quality among five harvest time, secondly October, then June and August.
