ABSTRACT

In this study, we developed the yam-mashed potato with health care properties by using potato and yam as main raw materials, as well as milk and light cream as auxiliary ingredients. Using sensory evaluation, single factor experiment, and orthogonal experiment, the following results were obtained: potato 35%, yam 35%, cream 18%, milk 12%, mixing time is 140 seconds. With this formula, the yam mashed potato is light yellow in color, delicate in taste and moderate in thickening, as well as rich in milk flavor.
