ABSTRACT

Grifola frondosa comes under Grifolaceae family and Polyporales order edible Basidiomycetes fungus with a large pileus and overlapping caps. Maitake is the name used in Japan for the edible fruiting body. “Mai” denotes “dancing,” while “take” is used for “mushroom” in Japanese language. G. frondosa is an edible and considered a nutritious meal since it is high in protein, carbs, dietary fibre, vitamin D2 and minerals like - potassium phosphorus, sodium, calcium and magnesium and at the same time low in fat and calorie. Fruiting bodies, mycelia and fermentation broth may all be used to extract G. frondosa polysaccharides using several extraction procedures. G. frondosa contains bioactive small molecules in addition to some macro-molecular components like polysaccharides and proteins or peptides. The total soluble sugar serving in Maitake mushroom fruiting bodies (90 to 190 mg/g) is greater than that found in the mycelium.
