ABSTRACT

Plants have long been appreciated for their curative effects on diseases affecting human health. Their extracts have been employed in the formulation of nutritional supplements, functional foods, and pharmaceuticals. The scientific and commercial community has recently taken an increased interest in Amaranthus owing to its extensive pharmacological activities, phytochemistry, and several biological benefits. Amaranthus is a pseudocereal crop that serves a dual purpose as both food and medicinal remedies. The current chapter provides a comprehensive description of the chemical composition and nutritional composition of Amaranthus seeds, along with various food preparations prepared from its seeds and possible benefits to human health.
