ABSTRACT

A major concern for worldwide public health is food safety. Every year, a large number of cases of infections and foodborne diseases are reported as a result of contaminated food. Recent modifications to food production, processing, and packaging techniques as well as customers’ ever-evolving eating patterns have an impact on the occurrence of foodborne illnesses. Foodborne illness continues to be a major concern for public health and the economy in both industrialized and developing countries, despite the fact that governments around the world are working hard to make the food supply safer. Many well-known infections are currently causing serious problems, and recent years have seen the emergence of new challenges as a result of pathogen interactions with food matrix causing fatal illnesses. In this regard, food safety guidelines should be followed. Besides, proper packaging of products and detailed labeling are a must for consumers’ satisfaction. This chapter discusses the consumers’ perspective all over the globe on food safety guidelines, and packaging and labeling requirements.
