In many cases the perishable items in which deterioration does not depend on temperature more significantly, there is no need to worry about it. But some items such as chilled food products are highly sensitive about the surrounding temperature. A slight increase in temperature may deteriorate the products up to the level which is not acceptable in the market. In the present study, the case of chilled pork is discussed. As the temperature increases slightly the pork starts to spoil, and it may affect the supply chain causing the loss to the vendors. In consequence, to develop a new model, we mixed the quality prediction model and the traditional deterioration model. In the proposed model, we used temperature dependent linear deterioration rate. To illustrate the model, a numerical example is also used. In this study, it is found that the present model is highly sensitive about the temperature. As the temperature increases, the profit decreases.
