ABSTRACT

Most of the human body mass is made up of six elements: oxygen, carbon, hydrogen, nitrogen, calcium, and phosphorus, among which nitrogen (N2) and phosphorus (P) constitute approximately 3% and 1% of the human body weight, respectively. Nitrogen and phosphorus are the two vital elements that play an important role in human body, yet too much of them may be harmful. This chapter aims to estimate and compare the nitrogen (NO3– –N and NH3–N) and phosphorus PO4–3–P contents in spinach, brinjal, cauliflower, mustard leaves, and water (used in cultivation) collected from Sonarpur and Kolkata Dhapa. All the fresh and dhapa vegetables as well as respective water samples were compared on their nitrogen and phosphorus content. The nitrogen content of all the vegetables and water were estimated in form of ammonia and nitrate ions respectively.
