ABSTRACT

Isomaltolose is an isomer of sucrose, which is similar to sucrose in physical properties such as sweetness and solubility. It has many excellent physiological functions such as low calories, no caries, no obesity, no rapid rise in blood sugar, etc., and can be added to various foods as a low-calorie sweetener. Sucrose isomerase (EC 5.4.99.11, SIase), also known as isomaltolose synthase or trehaloketolose synthase, can isomerize sucrose into isomaltolose and trehaloketolose, where the main product of most sucrose isomerase catalyzed reactions is isomaltolose. In this chapter, the properties, structure, production, and application of isomaltolose and the preparation of isomaltolose by enzymatic method are reviewed. The properties of sucrose isomerases from different sources, their heterologous expression, expression optimization and molecular modification are summarized.
