ABSTRACT

The outbreak of COVID-19 has put human lives at stake in the global economy. The National Restaurant Association of India (NRAI) reports that the country’s food services industry, which is valued at 423,865 crores, is responsible for the employment of more than 70,000 individuals. It is concerning that the widespread occurrence of this pandemic has resulted in substantial upheavals in the thriving industry that this sector represents. Because of the epidemic caused by the COVID-19 virus, the travel and tourism industry is on the edge of an existential crisis, which has resulted in an abundance of unanticipated difficulties and roadblocks. The hotel and tourism industries, of which the food business is a crucial component, are doing everything they can to ensure their continued existence. In the backdrop of the threat of the COVID pandemic, emerging trends indicate the strategic changes in the industry’s service patterns. The coming years will redefine eating out for the customers as per the new dining normal. The strategic shifts occurring within the hospitality business are the focus of this research study. The intention is to know how the different domains of 146hospitality will adapt to the changing paradigm. This chapter has discussed the overwhelming reservations of the customers toward hospitality services. This study contributes to a deeper comprehension of the new management techniques that have taken place within the tourist and hospitality business as a whole and within the food and beverage sector in particular. The transformed management practices will help capture the altered strategies of the industry, thus addressing the customers’ expectations of the new normal. This chapter offers a post-pandemic playbook regarding the impending shifts in the standards of the hospitality business as well as the new normal. This article has discussed the revival of the hospitality industry post-COVID-19 from the supply side, addressing the apprehensions from the demand side. The study has derived some meaningful strategies and the reformed protocols adopted by the industry to meet the customers’ expectations and changing preferences.
