ABSTRACT

Sampling enables comprehensive analysis of any given product for assurance of quality. Sampling is a procedure that needs more careful attention. Analysis of the laboratory samples is to be valid only when collection, transport, and storage of samples are critically done. The sample must be a true representative of the bulk, and hence, it is important to carry out a proper sampling to obtain accurate results. Samples obtained from inadequately mixed dairy products may not be representative of the entire batch, even if collection and transport are conducted under ideal circumstances. The sampling personnel must take care that no contamination (chemical or microbiological) is introduced into the sample during the collection and transportation of the sample. This chapter covers the sampling method for the chemical analysis of milk and milk products.
