ABSTRACT

Milk plays an indispensable role in our daily diet. in the present scenario, various types of milk are marketed. Ensuring compliance with the regulatory standards of milk is an indispensable requirement. Milk analysis is important for the economic viability of the dairy industry, effective process control as well as consumer interests. The compositional quality of milk has a direct bearing on the quality of dairy products that are prepared from it. Therefore, it is imperative to practice systematic analysis of milk to ensure uniform quality of dairy products. This chapter includes procedures for determination of contents of fat, protein, solids-not-fat (SNF), ash; calcium, citric acid (CA), vitamins, minerals, etc.
