ABSTRACT

Gelatin is a colorless, flavorless and opaque protein derived from collagen, which is obtained from various animal body parts. Commercially, gelatin is manufactured from skin and bone from slaughtered animals that have been approved for human consumption. Gelatin is derived from collagen, an insoluble fibrous protein which is the principal constituent of connective tissues and bones. Gelatin is mainly manufactured from pig skin, although it can also be produced from cattle skin and bones. However, it is very important that all of the raw materials used in the production of gelatin come from registered slaughterhouses. Gelatin is consumed extensively by humans in diverse food and dairy products, frozen foods, desserts, gummi bears, marshmallows, circus peanuts, lozenges, wafers, bakery fillings and icings, meat products and alcohol. Clinical efficacy of collagen hydrolysate supplementation on bone metabolism was investigated. As a preventive measure, infants are given a series of immunizations shots throughout the first few years of life.
