ABSTRACT

Globe artichoke has been originated from North Africa and other parts of Mediterranean region. The globe artichoke, commonly known as artichoke and Hathichoke in Hindi, is an important vegetable crop in France and other European countries, North Africa, South America and the United States. Nutritionally, artichoke is not a valuable crop. Though it is low in protein, the levels of minerals and vitamins rank the artichoke seventh among the top vegetables. Globe artichoke is especially grown for its young immature heads, enlarged receptacle, fleshy inner bracts and choke, that is, immature flower buds, pappus and bristles. In addition to use as food, it has been reported to have medicinal benefits, including reduction of blood clotting and capillary resistance, neutralization of some toxic substances and amelioration of gastrointestinal process. The cultivated forms of globe artichoke are dicotyledonary herbaceous thistle-like perennial plant whose edible part is fleshy base of immature flower bud.
