ABSTRACT

The exact centre of origin of asparagus is believed to be originated from Eastern Mediterranean countries and traces of wild varieties have been discovered from Africa. Asparagus shoots provide a good amount of calcium, phosphorous and vitamin C and it is a good source of energy. It contains an appreciable amount of potassium too. This chapter tabulates the nutritional composition of asparagus. The tender shoots or spears are used for making juices and cooked as vegetable. Mustard sauce is also prepared with asparagus spears. Asparagus is also known for its numerous medicinal properties as it is anti-inflammatory, diaphoretic and demulcent. Asparagus is a high-value crop and the earliest producing spring vegetable. Asparagus can be grown on a wide range of soils but it thrives best in sandy, silt loam or alluvial soils with a high content of organic matter in soil.
