ABSTRACT

The two profile methods of sensory analysis are Flavor Profile and Profile Attribute Analysis. Profile Attribute Analysis is both descriptive and numerically based method of sensory analysis. This method differs from Flavor Profile in that more than one sample is analyzed at one time, and the findings can be treated statistically. Profile Attribute Analysis is an extension of the Flavor Profile Method in concept and implementation. Psychologists classify the Profile Methods as phenomenological as opposed to psychometric or psychophysical. A democratic style of leadership, on the other hand, in which the leader merely facilitates group activity and decision making, has been found to foster cooperation, synergy, and a marked increase in productivity. The profile approaches rest upon role relationships which are models of those contemporary social psychologists advocate in the place of the traditional subject-experimenter relationship. The training of a flavor profile panel should be looked upon as an investment in a scientific instrument which requires proper use and maintenance.
