ABSTRACT

Water was one of the earliest natural green solvents previously used in the extraction of edible oils; in spite of the poor quality and low yields of oils obtained, scientists managed to develop an advanced steam technology to improve the overall outcome of the process. The introduction of ultrasound technology to facilitate the aqueous extraction of edible oils has seen success. This chapter discusses the most applicable approaches utilizing green and eco-friendly solvents to extract a variety of edible oils from a number of plant materials. For the purpose of edible oil extractions, many important factors associated with solvents' physical and chemical properties will have to be considered prior to their initial utilization; in addition to their effective extraction behavior, a good green solvent will have to best fit almost all twelve principles of green chemical engineering concepts mentioned earlier.
