ABSTRACT
This chapter describes the Health in All Policies (HiAP) approach to policy development. This policy framework utilizes intersectoral collaboration and tools that identify opportunities to improve the health and health equity of communities by creating environments that make healthy choices easy and convenient. The chapter discusses food as a social determinant of health and how governments can address poverty and health inequities through policy initiatives related to food, food security, and food safety. Tools for development, implementation, and evaluation of a Health in All Policies approach are discussed, as well as examples of successful implementation in numerous locations both within the United States and internationally.
