ABSTRACT

Current market trends are challenging the food packaging industry as we know it. A global market imposes longer transportation and storage times, and consumers demand not only fresh, healthy, food products, but also convenience (e.g., ready to go meals or microwavable mono-dose units) and access to comprehensive information about composition, nutritional facts, origin, or traceability of the products they consume. Bio-based nano-structured materials offer innovative solutions to the market demands in this rapidly changing scenario. This chapter covers the most recent advances on the use of biomaterials for producing functional nano-structures and their application to active and intelligent packaging for food applications.
