ABSTRACT

Food safety continues as a topic of greatest relevance despite the advances in novel technologies for food preservation. Nanotechnology can play an important role in the field of food preservation since it can be applied in several ways, such as in the improvement of the quality and safety of food, providing enhancing shelf life during food storage. Nanostructures can be useful to deliver antimicrobials, antioxidants, and flavor in food systems with increased efficacy through controlled release of bioactive substances. Nanotechnology also provides the basis for development of nanometric sensors that can be very useful for detection of pathogens, toxins, pesticides, and other hazards in food.
