ABSTRACT

This chapter presents some selected types of bioactive compounds from these sources, the way of incorporating them in foods and examples of testing their effects on human health. It deals with the techniques used to study the potential beneficial effects of bioactive phytochemicals for human health. Food is an essential factor for the survival of humans. Among foods that are characterised as functional foods, honey and other products originating from the beehives take a prominent place. Honey, propolis and royal jelly may be used as functional foods because they have high antioxidant potential. The recovery of anthocyanin after extraction depends primarily on the types and concentration of solvents, time, temperature and solvent to solid ratio. Plants have long been used as health foods and sources of medicinal properties. The anthocyanins in a product may present in much lower concentrations than expected because the anthocyanin itself is sensitive to various processing conditions.
