ABSTRACT

Fruits and vegetables consumption plays an important role in human nutrition and provide essential vitamins, minerals, and dietary fiber to the human. With the development of processing technology, reduced transportation cost, increase in production of fruits and vegetables the trade in fruits and vegetables has become increasingly globalized since the 1980s and it continues to expand its scope. This chapter discusses the status of major fruits and vegetables producing countries of the world. It covers the present conditions and scope of processing of fruits and vegetables in different continents of the world. In processed product categories, fruits and vegetables products are sold in variety of processed forms. Broadly, these processed products can be categorized in four major groups: canned fruits and vegetables; dried/dehydrated fruits and vegetables products; frozen fruits and vegetables; and juices/pulp/concentrates, precut vegetables and ready-made salads.
