ABSTRACT

Milk and dairy products are useful to all categories of population, as it the major source of protein and calcium in the readily available form. Food packaging is an external means of preservation of food during storage, transportation and distribution. The introduction of pasteurized milk created the need for packaging to avoid post-pasteurization recontamination. In milk however, applications have been limited to pasteurization, sterilization and surface treatment of products to increase the shelf life. No advserse effects on flavor of milk has been reported by microwave pasteurization of milk. There exists a wide range of separation processes and finds vast applications in the area of dairy and food processing. Membrane filtration is a term used for processes of microfiltration, ultrafiltration, nanofiltration and reverse osmosis. In cheese-making, applications of high pressure processing involves inactivation or reduction of pathogenic and spoilage microorganisms, increased cheese yield and acceleration of cheese ripening.
