ABSTRACT

In this chapter, three microencapsulation methods based on spray technology are studied. The principles of spray drying, spray cooling, and spray chilling techniques, as well as their applications in various industrial sectors are explained. Mathematical models for spray drying are presented, ranging from the traditional linear models for a single liquid droplet to a full drying system using the most advanced three-dimensional computational fluid dynamics simulations. Moreover, the most common constructions of spray drying installations in the industry, the advantages and disadvantages of each spray microencapsulation method, and the most commonly used materials in the encapsulation process are described. An extensive literature review of the fields of spray drying, spray cooling, and spray chilling microencapsulation is provided.
