ABSTRACT
The approach to official controls, with the same aim of safe food production, may vary from country to country. These differences may also be noted in terminology being used when describing official controls. For the purpose of this chapter, in very general terms, the UK approach, and the terminology in use, is described within the context of the EU and UK applicable laws.
