Electrical Impedance Spectroscopy (EIS) has been used to study the impedance variation in cucumber during its storage over a wide range of signal frequencies. The electrical impedance measurement of biological tissues is generally conducted either with a two electrode method or four electrode method. The objective of the research is to perform impedance measurement on cucumber during storage using 2-electrode and 4-electrode method and to compare variation in impedance between these two methods. The experimental results show that impedance measurement performed on cucumber by four electrode method gives better results in terms of modulus of impedance and impedance phase angle as compared to two electrode method. It is observed that the problem of electrode impedance associated with two electrode method is eliminated in four electrode method.
