ABSTRACT

Edible plants form the basis of the diet of man in every country, whether they are consumed directly or after they have been eaten by animals and converted to meat, milk, or eggs. A rapidly rising world population presents an increasing threat to world food supplies, especially as more and more countries whose traditional diet has been mainly plant foods, adopt western-type diets rich in animal foods. Since an adequate diet can be compounded in many ways, we will consider in the following pages the adequacy of the simplest diet known to man — a diet composed largely or entirely of foods of plant origin.
