ABSTRACT

The weakest link in the postharvest handling chain of fresh fruits and vegetables is the home handling system. When considered systematically as an integral part of the postharvest handling chain it becomes apparent that the home handling system is very complex. While the ultimate goal of delivering a quality fruit or vegetable to the mouth of the actual consumer may be true for both the postharvest handling chain and the home handling system, there are many differences between the two processes. Quality of fresh fruits and vegetables are evaluated by the home purchaser, the preparer and the consumer. The motivated purchaser/ preparer/ consumer has limited information on product history and few options for optimal storage of fresh fruits and vegetables in the home. More knowledge of home handling systems is essential for improved quality of fresh fruits and vegetables in the home.
