ABSTRACT

316Nanoemulsion-based delivery systems have a high demand in the food industry due to their unique properties. Nanoemulsion systems have gained more attention for the incorporation of functional compounds to prevent their degradation and enhance their bioavailability, solubility, and consumer acceptance. The present chapter illustrates and gives an overview of the nanoemulsion production system, ingredients used, applications in the food industry, and also the current analytical techniques used for the identification and characterization of nanoemulsions. Moreover, the physical properties of nanoemulsions and the possible factors that affect the design of functional nanoemulsions are briefly described. The chapter also throws some light on the toxicological concerns and regulatory aspects of food grade nanoemulsions.
